Is it possible to cook butternut squash without cutting it open? I find it VERY hard to cut a big squash in half. It doesn't help that I don't have a good sharp knife either. I thought I read somewhere that you can just prick a whole one and roast/bake it in the oven. :confused3

I used to do that years ago. Unfortunately, I don't remember the details - except I put it in a glass pan first so it doesn't drip all over.

Cut off the top and bottom first, that takes away the two toughest bits!

I use my Pampered Chef cooks knife to cut mine, making sure to sharpen it before I start.

I ended up poking it with a knife a few times and then baking it in a foil lined pan. It worked great! I will never cut another butternut squash in half again before I cook it.

I cooked an acorn squash by poking it with a knife, placing it in a pyrex and nuking it...

why oh why cut an uncooked squash ever again??? :)

I cook butternut squash, pricked, in the microwave about 10 minutes. Cut off the stem end first. The squash is tender enough then to deal with it. Then I cut the squash open, remove seeds, peel, and cut into the size pieces I want and put it in a casserole. I add brown sugar and butter, and nuke another few minutes until all of the squash is tender.

Ditto lovewdw...I use acorn squash.

herc.
