Buses after park closing

We have a ADR at Rainforest Cafe at AK 30 mins after park closing. Will the buses still be running back to resorts when we're done eating 7-7:30ish or will we need to take a cab back to CBR?

You won't be stranded. There will be buses to take you back to the resort. When it starts getting late they might consolidate some routes so there'll be several resorts on one bus. If you are really late the buses will go to DTD where buses go to the resorts until 1 or 2 AM. If it gets to the point the buses are going to DTD I would save time and take a taxi. There will either be taxis waiting outside AK or CMs who can help you call for one.
