I just finished binging all 4 seasons of Selling Sunset, and one of the things that stuck out to me was their love of Burrata cheese and a Burrata salad (Burrata, Tomato and Basil?). I am fairly sure I have had it before (perhaps thought it was an odd slice of mozzarella) but for the life of me I don't recall seeing it on many menus in my area. Is this a new fad, old fad that's new again, or have I just been living under a rock?

I'm not sure it's a fad of any kind, just something that mostly is seen in upscale bistro type places with Italian influence. It's typically house-made, or at least that's the claim on every menu I've seen it on. My DH likes it but I find the texture too soft in an unplesant way. Give me a Caprese salad with firmer mozza please.
 
Burrata salad is fairly common on Italian-esque menus. I think it's so delicious and creamy. I've even bought it at the grocery store before. I do think it's becoming more common these days, but I've certainly seen it around for years.
 

I had it in a salad at an MCO restaurant once. It was a plate of sadness.

I see it occasionally on menus for pretentious bistros sometimes. I avoid it.

But I absolutely love regular fresh mozzarella. On pizza. In salads. Caprese. With prosciutto and tons of sea salt.
 
I love it, we get it at the grocery store sometimes. It's just mozzarella with a very soft creamy middle, and I love mozzarella in all its forms.
 
It's incredible!! The first time I had it was actually at Wine Bar George in Disney Springs (pictured). It's on their "Small Plates" menu and it's a MUST for us every trip! Like a few have said before, it's similar to mozzarella but it's softer.

I suppose it's a fad in the US.... it's been made for a century in the heel of Italy, so it's a regional thing that has been picked up. It's meant to be served fresh, so in that sense restaurants consider it a higher end offering compared to standard mozzarella. I like it but still prefer standard fresh mozzarella

That's where I first had it, too.

It is mozzarella, filled with scraps of mozzarella and cream. A way to use up leftover bits of cheese.
 
It’s very popular here, I tried it for the first time at a local restaurant over 5 years ago. In my area, every bakery, deli, and grocery store makes their own fresh mozzarella, ranging from $6.99 to $24.99 a pound. I do love burrata, and have found places her to buy fresh (but will still eat the ones prepackaged at the grocery store.
 
There is one place locally that has it on their menu and changes it up with the season.

A few weeks ago my daughter in law and I ordered one to share and it had beets and some type of nuts inside.

it was delicious and we enjoyed it! But a basically eat everything!
