I'm a HS teacher w/two small kids and a hubby. For the last 2 years, I've marathon cooked on the first Sat. in August and froze close to 100 meals each year to be used for suppers during the school year. (This completely saves my sanity and I don't have to do the 4:00 "what's for dinner?" routine.) I also make about 30 homemade pies (peach and blueberry) to be pulled out during the year for desserts, carry-ins, etc.

Anyway, now that we've started Atkins, I'm wondering what to do. Not all of my recipes were hi-carb, but alot were. Does anyone know of a website or other resource I could use for help?

I OAMC, well more like twice a month and when DH went on Atkins I started cooking bacon in the oven by the pound and freezing it, the same with sausage patties and sausage crumbles. My style is more like have the basics frozen then assemble. We grill chicken breasts, I think last time we did 32 bonless, skinless breasts to freeze. We throw together a salad or steam some vegetables and dinner is served!

Having things in the freezer sure does make dinner time easier!

This is a great idea.

I wish that I could help you, but my cooking is very limited to making salads or steaks, hamburgers, bacon and eggs.

Please post what you learn, because I sure would like to freeze and cook meals in bulk.

What a great idea. I think Melissa's idea would work best at my house. It's just me an my husband. I don't need them for everyday but when I'm away and my husband is on his own it would be a great help to him.

There are some low carb recipes stuck at the top of this board, I don't know how many are amenable to freezing, though.

I too am a teacher who heads back to work on August 27. However, I am not a great cook.

I purchased "500 Low-carb Recipes" by Dana Carpender. I love it. they are easy recipes with items I can buy in my local area.
Plus they are meals DS 12, and DD 7 will eat!!

The pepperoncini beef (recipe in the sticky at the top of WISH page) is great and very doable for OAMC.

And for Crockpot try using boneless, skinless chicken breast and a bottle of Italian dressing. I really thought yuck the first time I heard of this one but it is so yummy! We use Newman's Own because of the carb count. And the chicken just falls apart.

We are heading out to the beach so I am up to my eyeballs (I know, what am I doing here!) but when I get back I can post some more that we use!
