Buffalo (?) question

So... I was looking at the Trail's End Christmas Day menu....

Entrees: Carved Buffalo Steamship, Sliced Turkey Breast, Ham with Cherry and Plum Sauce, Fresh Fish of the Day, Fried Chicken, Barbecue Ribs, Cheese Ravioli with Alfredo Sauce, Green Beans with Onion and Bacon, Carrot and Parsnip Medley, Macaroni and Cheese

Carved buffalo steamship.....

.... can someone please tell me what that is?

i'm going to guess that it's steamship roast buffalo rather than steamship roast beef (cow)... "steamship" refers to a "cut" of meat, i do believe... it's usually a big honking piece of meat that stands on it's own and the chef carves off of it...

Ah, that makes sense. I've never heard the term steamship in relation to food before, beef or otherwise.
