Budget for January 2019 trip

I'm trying to get an idea for our hotel/food/ticket budget and if we are looking at a package or just get resort/tickets and pay for food for next January or add on a dining plan.

Any idea of what month I could run numbers for pricing that would be similar prices to early January?
