Remy Champagne Brunch appears to be a one-time event. For my fall Eastern sailing its 12:30 on the first full sea day. Remy dessert event is the same, I believe its 3pm on the last sea day.
Palo seems to have more brunch time options, operating more as a normal restaurant with varied seating times.
ETA-- Remy is a fixed-course event vs a buffet at Palo, hence the different styles and flows of people.
