Brunch ideas wanted for DS' confirmation party

My son will be receiving his confirmation on 10/29. Since it is on a Friday night and they've limited the number of guests in the church, we will have his party on 10/31, which is a Sunday and is Halloween. My DH works on Saturdays and a friend of ours is having their party on Sat. so that wasn't an option. Since it's Halloween and there will be children at the party, we thought we'd have a brunch so that people will still have the whole afternoon and evening for Halloween festivities.

I've never done a brunch before so I was looking for some menu ideas. I don't want to tie in Halloween at all, but might do some fall decorating on the table. So I was thinking:

bagels with asst. cream cheese
mini muffins
smoked salmon sprinkled with capers
fruit salad
crudite of fresh veggies
deviled eggs
maybe a honey baked ham?

mimosas, bloody marys and coffee, tea for adults
juice and soda for kids


What else? Do I need more breakfast type foods?

What about something like this - it gets prepared the night before and gets baked in the morning. There are many types of recipes that are similar:

Scrambled Egg Casserole

1/2 C. butter, divided

2 T. all-purpose flour

1/2 t. salt

1/8 t. pepper

2 C. milk

1 C. shredded American cheese

1 C. cubed fully cooked ham

1/4 C. sliced green onions

12 eggs, beaten

1 can sliced mushrooms, drained

1 1/2 C. soft bread crumbs

Additional sliced green onions, optional

In a medium saucepan, melt 2 T. butter. Add flour, salt and pepper; cook and stir until mixture begins to bubble. Gradually stir in milk; cook until thickened and bubbly, stirring constantly. Remove from the heat. Add cheese; mix well and set aside.

In a large skillet, sauté ham and onions in 3 T. butter until onions are tender. Add eggs; cook and stir until they begin to set. Add the mushrooms and cheese sauce; mix well.

Pour in a 7 x 11 1/2 inch dish. Melt remaining butter; toss with bread crumbs. Sprinkle over top of casserole.

Cover and refrigerate for 2-3 hours or overnight. Bake, uncovered, at 350ºF. for 25-30 minutes or until top is golden brown. Sprinkle with onions if desired.

Yield: 6-8 servings.

I was also going to suggest a casserole similar to what clh2 posted. There are zillions of recipes for this type of dish, depending on what your preferences are.

Another thought would just be to have some scrambling eggs. When DD was baptized, we had a brunch at our house afterwards and just had a couple of people (guests who volunteered) with electric skillets scrambling eggs for anyone who wanted them. We also had some toppings (too complicated to do mix-ins!) for those who wanted them. (Salsa, cheese, etc. )

Your menu sounds great for a brunch. You could also serve quiche. I have a great recipe where you can make it ahead and then, either warm before serving or serve at room temperature. Let me know if you want the recipe. Also, there is a thread on here for Overnight French Toast. I make that all the time with guests. Good Luck!

PLEASE!!! I would love the recipe! You can PM me or post it here. I was thinking a few quiches would be a good idea as well but I would definitely need to make it ahead of time. I will look for the overnight french toast thread.

Search was down for me a minute ago, but I copied the overnight recipes from this board when I saw them.

PEACH FRENCH TOAST

1 c packed brown sugar
½ c butter or margarine
2 Tbl water
1 can sliced peaches, drained (29 oz.)
12 slices French Bread, 3/4 inch thick (day old)
5 eggs
1½ c milk
1 Tbl vanilla
ground cinnamon

In a saucepan, bring brown sugar, water & butter to a boil. Reduce heat & simmer for 10 minutes, stirring frequently. Pour into a greased 13x9x2 inch pan. Top with peaches, arranging bread over peaches. In a bowl whisk together eggs, milk & vanilla, slowly pour over bread. Cover with foil and refrigerate over night. Remove from refrigerator 30 minutes before baking. Sprinkle with cinnamon. Bake at 350 for 20 minutes covered. Remove cover & cook for 25-30 minutes or until bread is golden brown.

Blueberry Over night French toast
Servings: 8

12 slices day-old bread, cubed
16 oz cream cheese, diced
1 c blueberries, rinsed and drained
12 eggs
1/3 c maple syrup
2 c milk

1. Place half of the bread cubes into a lightly greased 9x13 inch baking pan. Scatter cream cheese over bread; sprinkle with blueberries. Place remaining bread cubes over the blueberries.
2. In a large bowl, beat together eggs, maple syrup and milk. Pour egg mixture over bread cubes. Cover pan with aluminum foil and refrigerate overnight.
3. The next morning, preheat oven to 375 degrees F (190 degrees C).
4. Bake, covered, for 25 minutes. Uncover and bake an additional 15 to 20 minutes, or until puffed and golden brown. Serve warm.

Baked French Toast
When this dish hits the buffet table, it's gone in a matter of seconds! A guaranteed hit!

1 loaf white bread - cubed
8 oz cream cheese - cubed
12 large eggs
½ c maple syrup
1½ c half and half
2 Tbl granulated sugar
1 tsp vanilla extract
¼ tsp nutmeg
¼ tsp cinnamon
speck of salt

butter a 9x13 baking pan
place ½ of bread cubes in pan
evenly space cream cheese on top of bread
add remaining bread cubes

Mix together remaining ingredients and pour evenly over the bread. Cover and put in the fridge over night.

Praline topping:

1 c butter, room temperature
1 c light brown sugar, packed
1 c chopped pecans
2 Tbl light corn syrup
½ tsp nutmeg
½ tsp cinnamon

Using a pastry cutter, or your fingers, mix all ingredients, spread it evenly over the bread. Bake for 40-45 minutes, uncovered, in a 350 degree oven until puffed and lightly golden.

Serve with warm maple syrup. Also good with a dash of fresh whipped cream, or honey.
 
Here you go. I usually make completely then, let it cool before refrigerating. Then, I either bring to room temperature or warm in an oven for 20 minutes at 325. Both recipes are pretty much the same. You can substitute whatever ingredients you want for the cheese and the main part.

SPRING VEGETABLE QUICHE:

INGREDIENTS:
4 egg(s)
1 1/2 cups milk
1 cup shredded Swiss cheese (about 4 oz.)
1 package (10 oz.) frozen chopped spinach, thawed and squeezed dry
1 package Knorr® Recipe Classics™ Spring Vegetable Soup, Dip and Recipe Mix
1 (9-inch) frozen deep-dish pie crust

Preheat oven and baking sheet to 350°.

In large bowl, with wire whisk, beat eggs. Blend in milk, cheese, spinach and Knorr Recipe Classics Spring Vegetable Soup, Dip and Recipe Mix. Pour into pie crust.

Bake on baking sheet 50 minutes or until knife inserted halfway between center and edge comes out clean. Serves 6.




SAUSAGE QUICHE

INGREDIENTS:
4 egg(s)
1 1/2 cups milk or half and half
2 cups shredded Cheddar cheese (about 8 oz.)
16 oz of sausage (such as Jimmy Dean)
1 package Knorr® Recipe Classics™ Spring Vegetable Soup, Dip and Recipe Mix
1 (9-inch) frozen deep-dish pie crust

Preheat oven and baking sheet to 350.

Cook sausage until crumbly and browned in a frying pan over med high heat stiring constantly. Combine eggs, milk or half & half and Knorr mix in a small bowl. Layer the cooked sausage on the bottom of the pie crust. Sprinkle the cheese on top of the sausage. Then, pour the milk mixture on top.

Bake on baking sheet 50 minutes or until knife inserted halfway between center and edge comes out clean. Serves 6.
 
What about making some rice krispie treats for the kids? There are several fall ideas in the magazines now==pumpkins, leaves, spiders, etc.

Your list sounds great.

You can always add some bacon or sausage. I have a great recipe called "Irish Potato" which is made with hashbrown potatos. It is a big hit. You can make it the day before and just cook it Sunday morning.

I also have an easy quiche recipe. It's made with brocolli cuts and mushrooms. It is so good!!

I love coffee cakes. I have a great sour cream coffee cake recipe that has a layer of cinnamon sugar. It is so moist and yummy.
