Brownie mix?

I just got a message from work that we are having a potluck TOMORROW and can I bring something. I went grocery shopping this morning and do not want to go to the store again. The theme is "Soul Food". I have brownie mix, the cheap kind nothing fancy, and with such little notice I fear that is the best I can do. I leave for work at 4 am so nothing open on the way in. Anyway to jazz up the brownie mix with something I would have on hand? I don't have any choc chips. Would it be weird to put mini marshmallows and a squiert of hershey syrup? Should I do this before I bake or after?

And for the record, I don't really know what soul food is? I think it is southern cooking? My coworkers are good cooks, I just wish I ahd more notice so I could have attempted something more exciting. I just googled sould food YUM. Now I am hungry. I would have done mac and cheese but that would require a trip to the store. Ugh.
 
Everyone likes brownies, OK maybe not EVERYONE but enough of most people so you should be fine with it.
 
Do you have a can of chocolate frosting?

If you do, you could bake the brownies according to the directions, then sprinkle the marshmallows over the top. Melt the chocolate frosting a little bit in the microwave, then drizzle it over the brownies. It would set up firm.
 
Do you have any confectioners sugar and peanut butter? You can make a quick peanut butter frosting to put on them. Or, the marshmallows and choc syrup would be good- if you have some nuts, too, you could make "rocky Road" brownies.
 

Soul food with a brownie mix

I would try something like pecan praline flavor. If you have pecans that is.

Probably would take (about 1 cup) pecans (chopped into large pieces) and drizzle them with (1/4-1/2 cup) melted butter that is mixed with a little (1/2-1 tea) vanilla, and then sprinkle (1/3-1/2 cup) brown sugar over them place on a silpat or parchment paper lined baking sheet and bake for 30-40 min at about 325-350 stirring every 10 min or so.

Once cool add (gently) to prepared brownie batter and bake according to box directions.

Hint: to get brownies out of pan easier, and for easier cutting use parchment paper to line baking pan (use a little Pam on the underside of paper to help hold it in place, and cut notch for corners and spray the corners) being sure to leave at least 2 sides with flaps to be able to grab and pull a the whole pan of brownies, then cut them on the paper.
 
I put a large dollop of hersheys syrup in mine and top with cream cheese icing or chocolate icing. Yum! These are so moist. Most people think I use some special homemade recipe.
 
I melt some peanut butter in the micro and then swirl it on top like you would swirl with a marble cake. Nothing better than peanut butter and chocolate! :dance3:
 
I throw in about 1 cup of chocolate chips to my Brownie Mix...
 
You can also make s'more brownies: make a crust by combining crushed graham crackers w/butter - press the mixture into the bottom of the pan; put the brownie mix over the crust and bake; put the marshmallows on top and put it under the broiler just until they melt and start to turn brown. I would consider this "soul food!"
 
Here's a different idea...brownie cookies. They take a little longer prep wise, since you don't just splat them in a brownie pan, but they bake faster and you also don't have to cut them...and they are amazingly good.

Take the brownie mix and add one egg, 1/3 c oil, and 2 TBSP water. Mix well and bake 8-9 min at 375*, just until they are well set and look "done" around the edges. Let them cool for a minute or so before taking them off the cookie sheets. They come out really nice and chewy and are absolutely wonderful. I use a heaping teaspoon (measuring type) for each cookie, and they come out about 2" across, which I think is perfect for kids or picnics.

I usually make about half plain, and then add chopped nuts to the rest. One batch I also threw in some shredded dried coconut. Those were to die for.
 
From Style Network's "Pantry Raid" (which I don't believe is on anymore)

2 ready-made pie crusts
1/2 cup pecan halves*
2 boxes brownie mix
Water
Eggs
Oil

Preheat oven to 375 degrees. Combine each box of brownie mix with the number of eggs stated o the box and twice as much oil and water as listed on the box. (The extra oil and water creates more of a pie texture than a brownie texture.) Pour each batch into a pie crust and over with pecan halves. Bake for 45-60 minutes.

*I've made this recipe without the pecans and it still comes out tasting rich and delicious!
