Broccoli & Cheddar Soup

Where have you found the best broccoli & cheddar soup? My favorite is from a restaurant called Macado's.

Have you ever tried making it at home? If so, what is the best recipe you have?
 
I make it at home. I use a mix... I think it's called Bear Creek. I add frozen chopped broccoli and an extra handful of shredded cheddar to it. It's pretty good!

Thanks! I just bought some of that last week but haven't been brave enough to try it yet. I may try it this weekend.

Last night my boyfriend told me that he wants to make dinner for me on Valentine's Day and he wants to make me this soup from scratch since it is my favorite. I told him he could use that mix. He is such a sweetie! :love:
 
I use the recipe off the back of the bag of Pioneer Country Gravy mix. :)
 

Panera is hands down my favorite, plus I love the baguette bread that is served w/ it! YUM!
 
I love Paneras too! It is really, really good! Sounds like a lunch plan to me now.

You'll definitely want to add some broccoli. The broccoli that comes in it is like tiny tiny little pieces of pulverized stuff. I just dump a bag of frozen florets in it when it starts boiling.

That is sweet. What a nice guy. :)
 
This is a good recipe if you like Velveeta. We are having it tonight, and the kids love it!

1 Qt water
1 med. onion
10 oz. frozen baby broccoli florets
2 cubes (or packets) chicken boullion
2 cans cream of mushroom soup
1 lb. velveeta, cubed
salt and pepper to taste

Bring water to a boil, add onions and cook until onions are almost tender
Add broccoli and boullion, and cook until broccoli is tender
Reduce heat
Add cream of mushroom soup and stir until all incorporated, and smooth(I reduce heat for this otherwise the soup tends to clump together a bit)
Add velveeta and stir until melted and smooth

Panera bread for me too!!!! My second favorite is Black Eye Pea's!!! When I make it at home I make it from scratch with broccoli, chicken broth, velveeta cheese, cheddar cheese, noodles, garlic, etc. If I find the recipe I will post it.

Since we don't have a panera's here:mad: I will say that Quizno's has decent soup in a bread bowl and I add some chicken to mine.

He is so very sweet! Dessert plans have already been made, he just doesn't have a clue what it will be. ;)

No clue on the soup, but just wanted to say I love Macado's!!

ME TOO! I wish there was one closer to me. The closest one is about an hour away. Do you ever get the potato skins? :cloud9: You will have to try their soup too.

I'm for Panera too. I walk past one on the way home and I'll just grab that to go and eat it on the side of what ever dinner I'm having.
 
Panera's or Chili's soup is my favorites. Mmmmm soup! It's far too cold here in Minnesota today!
 
My #1 favorite is the broccoli cheddar recipe that came with my VitaMix blender, and it is sooooo simple to make! VitaMix is a much higher powered blender than most (the kind smoothie places use). As long as your blender can handle running continuously for 2-3 minutes on high, then you should be able to use a regular blender. In the Vita-Mix, this extra time in the blender actually heats up the soup. If your blender can't go for that long, just blend it to a smooth consistency and heat it in a microwave. IT'S SO YUMMY!

Oh, my #2 favorite is Panera's broccoli cheddar.

Here is my Vita-Mix recipe:

1 cup skim or lowfat milk, steaming
1/3 cup lowfat Cheddar cheese
1 cup broccoli or cauliflower, steamed
1/4 cup onion
1 teaspoon cornstarch
1/4 teaspoon chicken or vegetable bouillon or soup base (I always use 1 chicken bouillon cube)

VITA-MIX DIRECTIONS:
Place all ingredients in Vita-Mix container in order listed. Secure 2-part lid. Select VARIABLE, speed #1. Turn on machine and quickly increase speed to #10; then to HIGH. Run for 2 to 3 minutes or until smooth. Serve immediately. Note: Serve over steamed broccoli pieces.

REGULAR DIRECTIONS:
Place all ingredients in blender in order listed. Secure lid. Run machine on low, then switch to high. Blend until smooth. If needed, heat in microwave. Serve immediately. Note: Serve over steamed broccoli pieces.
