I would like to make something different for Thanksgiving dinner this year and was thinking about a broccoli casserole. But there are way too many variations out there. I had great luck getting your input for a guacamole dip (thanks, guys, it came out great!) so I am turning to the DIS again. Could you please share with me your tried and true Broccoli Casserole recipe? Thanks! :)

I am a Broccoli fanatic, so I've tried cooking it just about every way possible!

I found this recipe on allrecipes.com...I was looking for something different to make for Thanksgiving besides the traditional Green bean casserole. I looked at the ingredients and was not impressed, but gave it a shot. Everyone LOVED it, the mix of flavors is delicious! Do a trial run prior to your gathering, see what you think............................

Broccoli with Garlic Butter and Cashews

INGREDIENTS

* 1 1/2 pounds fresh broccoli, cut into bite size pieces
* 1/3 cup butter
* 1 tablespoon brown sugar
* 3 tablespoons soy sauce
* 2 teaspoons white vinegar
* 1/4 teaspoon ground black pepper
* 2 cloves garlic, minced
* 1/3 cup chopped salted cashews

DIRECTIONS

1. Place the broccoli into a large pot with about 1 inch of water in the bottom. Bring to a boil, and cook for 7 minutes, or until tender but still crisp. Drain, and arrange broccoli on a serving platter.
2. While the broccoli is cooking, melt the butter in a small skillet over medium heat. Mix in the brown sugar, soy sauce, vinegar, pepper and garlic. Bring to a boil, then remove from the heat. Mix in the cashews, and pour the sauce over the broccoli. Serve immediately.

The garlic butter and cashews thing sounds good. Normally, I like my veggies without much adornment. I really HATE veggie casseroles cause I feel like I lose the veggies. Maybe consider a quiche type thing with good cheese -guyuere or similar and lots of broccoli. The other way I like broccoli is in a cold salad with red peppers, sunflower seeds, a little onion and a nice dressing. All the ingredients would be chopped fine except the seeds.

I just wanted to add, that the ever popular Broccoli casserole with crackers, cheese etc is quite delicious, there are MANY variations if you look it up at allrecipes.com.
I have gotten into the habit of omitting the cheese, and just crushing a sleeve of Ritz crackers, pouring melted butter over the crumbs, mixing in a bowl, and putting that over your cooked Broccoli, which goes in the oven for 15 or 20 minutes. It is a little lighter (Not in calories, but in flavor!)

Broccoli Cheese Bake

2-3 bunches of broccoli
1 c. mayonnaise
1 medium diced onion
4 well beaten eggs
1 can cream of mushroom soup
1-8oz. bag of shredded cheddar cheese
1 package Stove Top Stuffing Mix
½ stick butter or margarine

Preheat oven to 350.

Cut and cook broccoli. Layer broccoli in a 9”X13”X3” casserole dish.

Mix ingredients from mayonnaise to cheddar cheese together and spread over top of broccoli.

Melt butter and mix with stuffing mix.

Sprinkle stuffing over top of casserole.

Bake for 25 minutes at 350.
