Lumiere's/Triton's offers the opportunity to be served at your table, which some may prefer when available, that is just a question of style. Eggs to order at table service turned into a circus at Triton's on our first cruise when my DSIL sent her eggs back 2 or 3 times as having been done wrong. Lucky me, I just eat eggs scrambled, but "over well" didn't seem do-able that morning. Parrot Cay has the same buffet choices as Topsiders/Beach Blanket, and with servers for beverages it is a nice setting with omelettes to order. On the days when sitting outside would be nice, which can be often, then go up top. They're each really different, and I just didn't see much advantage to the formal restaurant off a menu except that you got to sit at your table and be served. Oh--and be forewarned that there will be others seated at your table to fill the seats, so it is a chance to make new acquaintances, but perhaps not the place for solitary mediatation.
