Let me clarify, I’m familiar with the park and monorail hotel breakfast but this is my first stay at Riverside, not sure what other hotels are nearby for a quick trip for a breakfast buffet. This will be for a non park day.
The closest WDW hotels are OKW and SSR . Neither have a buffet or AYCE breakfast . None. Close to POR is POFQ. I think nothing at Disney Springs is really open for breakfast. Neither OKW nor SSR has a buffet, although I know Olivia's serves breakfast. Only things on weekdays on our last trip open for breakfast in Disney Springs were Wolfgang Puck Express and Earl of Sandwich which are just QS(the QS Pizza Pointe hadn't open ) . There are a some brunches at a few TS on Sunday ( maybe Saturday too ).None. Close to POR is POFQ. I think nothing at Disney Springs is really open for breakfast. You'll need to either take a bus or boat or drive your own vehicle to get to any other resort other than PO French Quarter. None are walking distance.It appears Riverside only has quick service breakfast any buffet or family style places close by?

How about the bus to MK and then the boat to Fort Wilderness for the Trail's End buffet? Since it is a non-park day maybe you could explore over there? Ride bikes, something like that? We did the pedal boats one time at the Meadow trading post, and that was fun.
