Breakfast Bar Recipes?

I have a bunch of quick oats and was wondering if anyone had a recipe to use them to bake Breakfast bars? My family loves breakfast bars but I'd to not buy the ones in the store if I can make them.
 
My Mom makes these pretty often:

Poppin' Fresh Breakfast Bars

Ingredients

¼ cup Flour
1 cup brown sugar, packed
½ teaspoon of salt
½ teaspoon of baking soda
½ cup Smart Balance buttery spread (1 stick) softened
1 teaspoon vanilla
2 tablespoons skim milk
1 egg white
1 cup quick cooking oats
½ cup chocolate chips
½ cup almonds

Optional Ingredients
½ cup fat free peanut butter
½ cup coconut
½ cup wheat germ



Directions
1. Combine all ingredients except oats, chips, nuts, and peanut butter(optional); beat on medium speed 1-2 minutes.
2. By hand stir in oats.
3. Add one optional ingredient if desired.
4. Spray 13 x 9" pan with cooking spray and spread dough.
5. Sprinkle dough with chips and nuts.
6. Bake at 375 for 15-20 minutes (-25 degrees if a glass pan)
7. Cool- loosen edges with a spatula
8. Cut into bars- 2 dozen
 
How about granola? This is a flexible recipe -- I use whatever goodies I have on hand:

HOMEMADE CEREAL

Ingredients
7 cups quick cooking oats
1 cup wheat germ
1 cup wheat bran
1/2 cup brown sugar
1/2 cup vegetable oil
1/2 cup honey
1/2 cup water
1 tablespoon vanilla extract
1 teaspoon ground cinnamon (optional)
1 teaspoon ground nutmeg (optional)
1 teaspoon salt
1 cup chopped dates (raisins, craisins, etc.)
1 cup chopped pecans (whatever nuts you have on hand)
1 cup flaked coconut (optional)

Directions
Preheat oven to 275 degrees F (135 degrees C). In a large bowl, mix oats, wheat germ, and wheat bran.

In a medium bowl, blend brown sugar, vegetable oil, honey, and water. Mix in vanilla extract, cinnamon, nutmeg, and salt. Stir the brown sugar mixture into the oat mixture until evenly moist, and transfer to a large, shallow baking dish.

Bake 45 minutes in the preheated oven, stirring every 15 minutes, until lightly brown. Mix dates, pecans, and coconut into the dish, and continue baking about 15 minutes. Allow to cool, and store in airtight containers.
