We are staying off site and have an ADR at Kouzzinas at 7:45 and then planning on heading to Epcot for the day. First, does anyone have any experience with eating gluten free there? We also eat dairy free. Also, what's the best way to handle parking? We have a car but am concerned about the 3 hour limit parking at the hotel as we planned to walk over to Epcot..

I can't help much with the dietary issues, but I can help with the parking issue. Parking is not provided for park access at Boardwalk, in self-parking. You can park there, free, if you are eating or visiting the resort itself. But, not if you are heading to a park.
But, you can pay to valet park at BW and then head off and go wherever you wish to, for as long as you wish to. That would be the right choice for you.

Kouzzina seems to be very gluten-free friendly. A friend of my CM DD goes there quite frequently for breakfast and he is gluten-free. I know when I was on South Beach I had their turkey hash which had a poached egg and a green salad, very good.

We ate breakfast there two years ago and two of us are gluten free. I can't remember exactly what we ate, but I do remember GF Mickey waffles and we all loved our breakfast and would go back in a heartbeat!

Kouzzina does an amazing job with gluten free dining issues!! They have several alternatives to their pancakes, waffles, etc, and have alot of really amazing egg and chicken sausage dishes. When I was in Disney in December, one of the chefs informed me that they would be changing their Tapioca rolls. They will have a gluten free option that includes eggs, or a vegan option that includes wheat...they won't have the previous one that was both vegan and gluten free. BUT that should have very little effect for you! They should be able to do gluten free waffles with very little problem, and their oatmeal is delicious, as are their scrambles!!!
