The CRT drill goes as follows:
1. Check in and wait to be called
2. Wait in line to have your picture taken with Cinderella downstairs
3. Walk upstairs and get seated at a table
4. Order one of the options off of the breakfast menu, which will be pre-plated and brought to your table (regardless of what you order, a plate of pastries will be brought for the table to share, along with drinks, then the individual entrees are brought out)
5. Princesses (Snow White, Auora, Jasmine, Ariel) come to your table while you eat
6. The check arrives (usually about the time the last princess visits)
The whole thing typically takes about an hour.
Every time we have done this, the service has been very rushed and jaded (their incentive is quantity of customers "processed", not quality of service, as the tip is already included). In that regard, you get the feeling they hate their job and resent you (your best chance to have a decent experience with your server is to decide what to order before hand and not make any special requests, regardless of how minor - nothing annoys them more than customers who think they're entitled to something special because they paid a lot of money for the experience).
As far as the food quality goes, the pastries are somewhat above average but the entrees are very mediocre. The (under age 9) kids' breakfasts are a joke (similar to a kids' breakfast at Burger King).
In sum, from a service and food perspective, we've had better experiences at most character buffets. For that matter, we've had better experiences at Denny's and IHOP.
We return because we love the experience of eating in the castle with a pre-park opening ADR (this, along with the princesses, helps us overlook the forgettable food and surly service). We also like not having to worry about missing a character while we're trying to eat (unlike buffets). It's just a shame the food and service can't be better. But I suppose they have little incentive to do so as long as people like us keep returning (we probably need to start voting with our wallet).
