JodyLynC got me looking through my folder of "bread & muffin" recipes. I keep a whole separate section for bread machine recipes & am always looking for more of them! So please share your best. :thumbsup2

Apple Pie Bread

1 1/8 c milk
3 Tbl oil
2½ Tbl sugar
¾ tsp cinnamon
1½ tsp salt
3 c flour
1½ tsp yeast
1 large apple, diced

Place all ingredients (except apple) into bread pan in order listed. Add apple at the beep & adjust flour as needed. Use “sweet” or “basic” setting.

The smell of this one makes my kid very anxious for dinner! :rotfl:

Certainly Citrus Bread
1.5 Lb. (Bread Machine)

1 c water
¼ c orange marmalade
2 Tbl margarine or butter
1 Tbl lemon juice
1 Tbl lime juice
3 c white bread flour
2 Tbl dry milk
1 Tbl sugar
1½ tsp salt
1/8 tsp lemon peel
1 Tbl active dry yeast or 1½ tsp rapid-rise

This recipe can be used with the regular or rapid bake cycles.

This recipe feels like it has far too much fat to make it frequently, but oh my is it delicious! I like it for when we have company.

Italian Bread Pull Aparts

3¾ c flour
¾ c water
2 ¼ tsp yeast
½ c milk
2 Tbl sugar
2 Tbl vegetable oil
1 tsp salt
1 egg

Use dough setting on bread machine. When ready, turn on floured surface. Gently roll or stretch dough into 20” rope – divide into 16 pieces. Roll each piece into a small ball.

Italian Seasoning
6 tsp melted butter
2/3 c grated Parmesan
1½ tsp Italian seasoning

Roll each piece in melted butter then Italian seasoning mix. Layer coated balls in greased 2½ quart casserole. Cover and let rise in warm place until doubled (~ 30 min). Bake 30-35 minutes or until brown.

We like these with chili or beef stew...when I remember to start them soon enough. :guilty:

Texas Moppin' Rolls
Yield: 6 rolls

1 c plus 3 Tbl water
½ tsp honey
½ tsp salt
3 c bread flour
½ c shredded Monterey Jack cheese
¼ c shredded Cheddar cheese
¼ c minced onion
¾ tsp crushed red pepper
1½ tsp FLEISCHMANN'S Bread Machine Yeast

Add water, honey, salt, bread flour, Monterey Jack cheese, Cheddar cheese, onion, hot red pepper flakes and yeast to bread machine pan in the order suggested by manufacturer. Select dough/manual cycle.

When cycle is complete, remove dough from machine. Cover and let rest 10 minutes. Divide dough into 6 equal pieces. Roll each piece into an oval. Place rolls in greased 9x9-inch square baking pan. Cover and let rise in warm, draft-free place about 30 minutes, or until almost doubled.

Bake in a preheated 375-degree oven 20 minutes, or until done. Remove from pan and let cool on wire rack.

Got this one from a local newspaper. I really like it, (I don't usually like Panettone) but I do not use the anise seeds or the citron. I don't ice it either. It's really good toasted too.

Italian Panettone

1 - 1 1/8 c. water
2 eggs
2 tsp anise extract
2 tsp rum extract
4 tsp vanilla extract
2 T. unsalted butter
1/4 c. sugar
1 tsp salt
4 c. bread flour
1/4 c. nonfat dry milk
2 tsp anise seeds
2 tsp yeast
1/4 c. coarsly chopped pine nuts
1/4 c. golden raisins
1/4 c. candied orange peel
1/4 c. candied citron
4 tsp bread flour

1. Place first 12 ingredients in bread pan, using the least amount of liquid listed. Select Light Crust and Raisn/Nut cycle. Press Start.
2. Observe dough as it kneads. After 5 - 10 min, if it appears dry and stiff or if machine sounds as if its straining to knead it, add more liquid, 1 T. at a time until dough forms a smooth soft pliant ball that is slightly tacky to the touch.
3. In a small bowl, toss together the last 5 ingeredients. Add to the bread pan at the beep.
4. After baking cycle ends, remove bread from pan, place on cake rack and allow to cool 1 hour before slicing.
5. Once the loaf has cooled, frost the top with icing made of 1/2 c. confectioners sugar, 1 - 2 tsp milk and 1/4 tsp. vanilla or rum extract.
 
I can't find my file with my bread recipes (may have lost it when I got the new computer :sad1: ), but I love to make kielbasa/cheese bread. I use a basic whole wheat recipe and then add 1 cup chopped kielbasa and 1/2 cup shredded sharp cheddar cheese.

I also love to make dill/onion rye - I add about 1/4 cup sauteed onions to my basic rye bread (with caraway seeds) and about 1 tablespoon of fresh dill or about 1/2 tablespoon of dried.

I'll keep looking for the file and put up the recipes if/when I come across them.
 
When I get home I'll add the "shredded wheat bread" recipe - it uses the ends of cereal (any old cereal) so its great for those crumby bits at the end - i even save the crumby bits in tupperware ready for the bread:rotfl2:
