You can do quite well for your family for $3k. We spend about half that much (DH & I) and we stay at a DVC, eat well and park hop!
Stay onsite in a moderate or deluxe (AKL or WL are good bets), buy park hoppers, and I think you should forget the dining plan. It's very expensive - $124 for your family each day - and too much food. All you will be doing is eating or stressing about wasting money if you happen to skip a meal. On your first trip you should be out enjoying the attractions, not eating 24/7. JMO.
Plus you'll be there during the F&WF and that means there's much to eat at Epcot that's not in a restaurant!!
