Booking to take advantage of Free Dining

This might be a silly question, but the brochure given to me today by TA, states Free Dining as long as you have booked by Nov 2016 for 2017.

Is there a need to book the holiday say in the next week or so, or is it only so many rooms available with Free dining and when they have gone, that's it?

Or is it okay to choose to book the holiday say in June/July of this year and we'd get what we wanted?

Some resorts will have limited availability in some room types and views but nothing will sell out immediately.

There is usually a gift card offer which will decrease in value at points in the offer.
