Booking Remy brunch once on board

I know that with Palo, you can often add brunch once you're on board. Does it work that way with Remy too? Palo brunch was added on our Nassau day, so we want to do Palo that day and Remy brunch on sea day. Remy is currently booked up though. What are the chances of being able to add it at sailing?

It's probably easier to get Remy than Palo, since Palo is more popular.
