Here are some info/tips that were not so obvious to me and that I would have liked to have known before bouncing on the phone between the ADR line, Guest Services and the restaurant.

1) I think you can only book this over the phone as I couldn't find anything on the website other than the announcement on the blog.

2) Ask for the "Flying Fish Chef's Wine Tasting Dinner." None of the ADR reps I spoke with had heard of it, but it does show up on their systems (maybe it's still too new, at 3 months).
I also probably picked a bad time to book since they kept confusing it with the F&W Signature dinner, even though that was a different date.

3) Based on the price ($135 + 7.44 tax), I think gratuity (18%) is included already.

4) The only option available (at least when I booked a few days ago) is the $135 meal with pairings. If you want the "without wine" option, the restaurant will refund the difference if you "opt out" at mealtime.
While I can understand having only 1 type in the booking system, I wish they had gone the "opt in" route and have everyone reserve at the lower level. Instead, even if you're sure you're not doing the wine pairings, Disney or FF still holds onto that $50/person or extra ~60%.
