Booking ADRs on the day-of

We're booked for a mid-August trip, and we're going to be at a DVC 2BR for most of our stay. We usually try to eat-in quite a bit when we stay in time-shares regularly, but we definitely plan to eat out on a number of occasions while we're at WDW.

My question is this. In past trips, I have booked many ADRs well in advance, and its great, except it locks you into an itinerary. We're spending a longer time than usual this time, and we're trying to make it as unscheduled and relaxing as possible. So, we are hoping to choose parks or destinations in the morning. In the last 2 weeks of August, do you think I'll be able to get reservations (for whatever time, doesn't have to be during peak times) at most restaurants if I call in the morning, or several hours in advance? I'm aware of the few places where its hard to get in even weeks or months in advance, so we'll steer clear of those places (le cellier, CRT, etc.). I'm thinking more along the lines of getting a table at Liberty Tree for dinner, if we walk by at 2pm or so. Or '50s Prime Time Cafe if we call from the resort in the morning.

Depends on what promotion is going on then. If, by chance, there is free dining at that time you will be hard pressed to get any TS meals without ADRs
 
Yeah, if that happens, then I'm getting on DDP, and I'll book in advance. I'm guessing its not going to happen though.
