booking ADR for the first evening we are there

We plan to arrive on a Sunday (mid-day?), spend Monday-Thursday in the parks, then leave Friday. (We are driving, if that matters at all.)

In order to maximize park time while we're there, can we book character dinner for Sunday evening (the day of our arrival--Sunday would be the first night we spend in resort), and another before we leave on Friday morning? And if so, would we be able to use our meal plan for this?

Yes, you can book a dining reservation for your first night in DW. Your dining plan credits will become available as soon as you check into your resort and will remain valid until 11:59 PM on the day you check out.

TS restaurants require a credit card guarantee when you make the reservation. Since you're planning to arrive mid day you should be fine, but if there is a traffic delay and you miss your dinner reservation you will be charged $10 per person. If you book CRT or one of the dinner shows (Hoop De Doo, Spirit of Aloha luau, Mickey's Barbecue) the penalty for missing the meal is the full cost of the dinner/show.
