Booking a Disney cruise or II exchange

Let's say we want to book a Disney cruise using our points (we know it is not the best for the $$) and we own at several resorts. At what point can we book the cruise combining all of our points? 11 months out? Or do we have to wait until a certain month to be able to combine points?

You are not limited based on your home resort in this situation assuming they are all under one master contract. You could book as far as around 2 years out if you wanted. You are limited as to when you must pay. The rule is you pay with points that occur during the trip. So if you booked a cruise for next July and had April use year, you could bank 2007 points and borrow from 2009 to accumulate as many as 3 years worth of points. If you booked April, 2009 (2 use years forward), you could pay with either 2007 OR 2008 use year point. It gets more tricky if you have multiple separate contracts or don't have the points when you'll need them. My experience is that DVC will still make it happen. Remember all points need to be in one contract for DVL and the like so it may take transferring banked or borrowed points from one contract to another if you have separate contracts. I know the rules say you can't but it is possible if that's the only way to make it happen, I know, I've done it.
