Booked ... Did we make the "right" choice?

I would go with two rooms as well. We had 5 in a CBR room for about five days and it got to be too much.

Third adult is my 75-year old mother. She's not a bother for us as a group because we've stayed with her on a shorter trip (not WDW) before, but a 9-night stay is unprecedented for us!

This alone.....2 rooms for sure. Or if you are looking at DVC, OKW wins by a landslide vs SSR in our book. The 1 bedrooms are HUGE and the overall feel of the resort the very relaxing and quaint. For 9 nights, having a kitchen plus washer and dryer are big plusses. However, is your mother okay on a pull out couch or pull out chair?

As of now she’d be fine on a pullout couch. However, DW is insisting on 2 bathrooms so we may end up switching to Pop and hoping for the best on a connecting room, as both comfort and pricing are most important to us.
