Book AP Room Only NOW to change to a package later?

I would like to book the current AP offers WDW has, which expires on 2/8. I want to book it as a room only, and then towards the end of March, change it to a Package with Dining.

I've done this about 10 times in the past, so I know they have to cancel/rebook...but I've never been in a scenario where the pricing may change. Since the current offer will have expired by then, will I still get the package for the same rate? Also, can I book the room only online and still convert it to a package?

bumping your question b/c we are in the same boat. Haven't decided if we want the dining plan yet for this trip, so we booked room only AP rate.

I have added dining before to my AP rate, but I don't think the time to book under the rate had expired when we did so. Maybe they will extend the AP discounts and we won't have to worry.
