Bon Voyage Breakfast - Allergy Menu?

Do we have any idea yet what their allergy-friendly menu will look like? I'd really love to do this meal, but being gluten-free I know some things (like the skillet of braided cinnamon roll or whatever it is) would definitely be modified - my guess is to allergy-friendly muffins which I think is what they do at Garden Grill.

Little bump here. I did book this as DS is a Flynn Rider fan, but am also interested in what might be subbed out for the skillet of pastries. Given the price, I'll be bummed if it's just a couple slices of GF bread or an Udi's roll.

I'm almost positive I read a review, or listened to a podcast review where they mentioned that the pancakes can be done gluten free.
