Don't kid yourself into thinking these are authentic African dishes as in most cases they have been made fit for 'gringos'. With that caveat in mind, however, the food IS very good and enables you to get some things that are not the standard buffet fare (prime rib, etc) although those are available to you if your idea of exotic dining is a 2nd fork at your place setting.
As mentioned above, their soups are generally fantastic, and their strengths really lie in their vegetable sides rather than the meats where they tend to play it a little more safe.
If there are just the two adults and you want to splurge, and more importantly, get away from the herding that goes on there (didn't you just suffer a week of that at the parks themselves?), then spoil yourself at the fantastic Jiko next door. I wouldn't necessarily call the foods more authentic, but the environment makes it well worth the price of admission. Oh, and they supposedly have the largest selection of African wines in the US if you are into that kind of thing.

...but if I am being honest...
...but I honestly feel it was because we didn't love the seasoning they use in most of the meat dishes. I am not sure what the specific spice is, but we didn't like it..and it seems to be in a LOT of dishes. We were staying at AKL and a lot of the dishes at the MARA seemed to taste similar as well. There are a lot of interesting choices...and we defiantely did not leave hungry, but I don't think we will be going back for dinner. Definately looking forward to trying breakfast there!
(Fortunately, most things are baked...) Anyway, I told her that she wasn't the designated driver, and that she could have all of the dessert she wanted!!!
