I think we decided to go with BOC because we just don't have big drinkers. Of the 8 people attending the wedding that will be of drinking age two will likely not drink any adult beverages at all, four will likely have one, maybe two, and two would have three tops. It just doesn't make sense to have a package bar.

That said, is BOC automatically a full bar or could we restrict it to beer and wine? Frankly, I think all our guests (all 8 of them) would be perfectly happy with a couple of bottles of wine, a couple six packs of beer, and maybe, MAYBE, some gin and vodka but I am pretty sure we would be happy without any hard stuff at all.

Is that at all possible?
 
Yes. At all the small catered events we've done, we just added drinks individually BOC. In your case you could also add bottles BOC.

If all we had was like 2 or 3 bottles of wine and a couple 6 packs of beer would we have to have a bartender?
 

At our Dessert Party, we had beer brought in on ice- no bartender necessary.
 
When we were dealing with DFTW the planners always pushed BOC vs the bar packages. Which we found interesting thought it would be the other way around.

the way to look at it is- package bar great for pre-plaining budget (one amount does not change)
however, if your group does not consume enough in drinks...you overpaid (sometimes allot of $$$ overpaying) and your out of pocket

your group will most likely not consume no where close to the number of drinks you will est
therefore, at the end of your event (majority) of the time you will have spent less $$$ than going with a package

due keep in mind (at least last year) Disney will still make you pre-pay an est amount even if your doing a BOC event
However, at the end of your event - if you did not consume the pre-paid amount- Disney will give your a refund or move that extra money over to something else

so package you know from the start it's only going to cost X dollars
dont consume "your money's worth" no refunds

you end up with the strong chance to get allot of money refunded to you
down side- if they do drink more than the pre-paid est charged...you will get a bill for the amount over this.

cant recall what Disney est per person drinks...but it's still ALLOT
we had quite a few drinkers in our party....and they still could not mange coming close to what Disney est



it's hard to know how much each person is going to drink etc and plain ahead of time
do some basic numbers

but due keep in mind Weddings and other events today- are all built upon emotion and trying to upsell you on every little item
your event will be not different with or without those extra upsells....only your bank account balance will change

We pre-paid for our BOC drinks based on Disney's estimate and got a tremendous chunk of change back. We chose the premium drink option. I don't know how they calculated our drinks, but I thought we drank More than what we were charged for. We asked that beer be brought into our dessert party (on ice) in addition to the standard beverages so people could have that option. 27 people- 6 beers consumed in the hour DP- so I'm glad we added it. Overall, we received over $500 back by going the BOC route. We had a few younger guests who didn't drink alcohol, but our bartender made Shirley Temples- and suddenly, everyone wanted them! He was great with keeping everyone well refreshed- whatever your choice of drink.
