what would be the quickest way for me to get from the boardwalk to animal kingdom lodge and how long would it take

Quickest way would be taxi, about 15 min.

Other than taxi, I would take the boat to DHS and catch the bus for AKL. Allow and hour. You could also get bus at Epcot's main entrance, again allow an hour.

If you don't use a taxi, I would walk to HS and then take the bus to AKL. The walk is about 10 - 15 minutes depending on your pace. I would allow 15 minutes to wait for a bus (unless you get lucky) and about 20 minutes for the ride. So you are looking at 45 - 60 minutes of travel time.
