This is my recipe for muffins. They are very lite and cake like. I add cinnamon or other spices, depending on the fruit. I don't add spices with blueberries, sometimes I'll add some lemon or orange zest, but they always get streusel.

3 cups cake flour
1 teaspoon baking soda
2 teaspoons baking powder
1 cup sugar
1/4 teaspoon salt
1 cup sour cream
1 teaspoon vanilla
1 large egg
1/2 cup vegetable oil
2 cups fruit (optional)
1/2 cup chopped nuts (optional)

Streusel topping (optional) 1/2 cup all-purpose flour, 1/4 cup packed sugar (or brown sugar) pulse in the food processor with 1/4 cup of cold, cubed unsalted butter until light, like fresh snow.

Preheat oven to 350°.

Sift the flour, baking soda, and baking powder into a large bowl. Add the sugar and salt; mix, and set aside. Whisk all the wet ingredients together in another bowl.

Add wet ingredients to the dry mixture and mix with a spatula, just until combined. Add fruit and nuts, and fold in gently. Don't over mix. It will be lumpy.

Makes 15-16 regular size muffins. Line or grease muffin tins and fill with batter up to 1/2" from the top. Sprinkle the streusel. Bake for 20 minutes, until golden-brown.

Not blueberry muffins, but blueberry tea cake (similar to coffee cake). I know you didn't ask for this, but it is yummy!!!

¼ cup flour
½ teaspoon cinnamon
¼ cup butter

Spread in prepared 12X8X2 pan.

Topping: Sprinkle with topping made of final four ingredients.

Bake at 375 degrees for 40-45 minutes. Keep an eye on it after 30 minutes.

I don't have a recipe, but because of this thread I have Betty Crocker blueberry muffins in the oven right now :teeth:.

I found this one. It's got Blueberry AND banana. Sounds yummy:

* 1 1/4 cup whole wheat flour
* 1 1/4 cup all-purpose flour
* 2 tsp baking powder
* 1 tsp salt
* 1/2 tsp ground ginger
* 1 cup vegetable shortening
* 2 cups sugar
* 2 cup mashed ripe banana (about 6 medium-size bananas)
* 4 eggs, light1y beaten
* 1 cup chopped walnuts
* 1 cup fresh or frozen blueberries

Method

Pre-heat oven at 400 degrees. Grease muffin pan or line with large paper baking cups. Stir flours, salt, baking powder and ginger; set aside.
In large bowl mix the shortening, sugar, bananas and eggs; add dry ingredients and stir just until batter is blended. Fold in blueberries and
walnuts. Fill prepared muffins pans about 2/3rds full. Bake about 20-25 minutes, or until a toothpick inserted in the center comes out clean.
Remove from pans and serve warm. Optional: Garnish top of muffin with walnut half before baking.

Thanks a lot, you guys. Just when I was doing so well on my path to not eating any sweets. My hips and thighs thank you. :sad2:
