blueberry muffin recipe

My DD22 mths is a VERY picky eater and her favorite breakfast is blueberry muffins.So I am looking for a healthy recipe to use that I can possibly make alot at one time and freeze some.Anyone got any they are wiling to share? :)
 
it's from betty crocker, i think. comes in a box, w/ a can of blueberries. instant! easy! just add water & oil, and maybe an egg? (all directions on the box!) my boys love them!! you'd find them at the cake mix aisle. :flower:
 
This is my favorite recipe for muffins. I haven't ever tried to freeze them, but I don't know why it wouldn't work.


Blueberry Banana Snack Muffins

1 1/2 cups sugar
2/3 cup butter
1/4 cup buttermilk
2 each eggs
1 teaspoon vanilla
3 each (2 cups) ripe bananas -- mashed
2 cups all-purpose flour -- sifted with
3/4 teaspoon baking soda
1/8 teaspoon salt -- 1/2" cubes
1 cup blueberries -- fresh or frozen
powdered sugar -- if desired

Heat oven to 350. In large mixer bowl combine sugar, butter, buttermilk, eggs and vanilla. Beat at medium speed, scraping bowl often, 1-2 minutes until creamy. Add bananas until mixed, 1 minute. Add flour, soda and salt. Beat at low speed 1-2 minutes. Stir in blueberries by hand.

Spoon into paper muffin cups sprayed with Pam. Bake 25-30 minutes or until toothpick comes out clean. Sprinkle tops with powdered sugar if desired just before serving.
