Birthday treat - best way to spend $100 -$200 max

I have a very belated birthday gift coming from GF and ideally we will do something fun whilst at WDW in September?

Any fun ideas? We have park tickets already and have been to Disney multiple times. If something is under 100 bucks that’s fine too. It’s not really about the money, I’m just putting a range out there to gather some ideas.
 
This is my $200 plan.

Me personally...

I would rope drop the parks. Head out at lunch and go to resort to eat big lunch/swim/rest.

Then early evening...

Uber/Lyft/Minnie van to Wilderness Lodge. Check out the resort as it is beautiful. Grab a drink/Small plate(s) at Territory Lounge (inside) or Gyser Point (outside).

Take the boat to the Contemporary. Reservations at California Grill for drinks/apps/dessert. Watch fireworks from CG or head into MK.
 

The Caring for Giants tour at Animal Kingdom is only $30 pp and doesn't seem to require a lot of planning or take up a huge chunk of the day. There are longer/more elaborate tours available (Keys to the Kingdom, etc.) if backstage interests you, too. Or you could add DAH or EMM tickets to your stay if those are being offered.

I second the suggestion to do Hoop Dee Doo, especially if it'll be your first time seeing it. The show is a lot of fun and I enjoyed the food as well. There's a Luau show at the Polynesian as well, but I haven't done that one and will leave it to others to chime in about whether it's worth it.
 
Pirates & Pals Fireworks Voyage would be a great birthday gift. Your night would start at Contemporary Resort where a large spread of snacks, including cupcakes, cookies, and ice cream. After enjoying some drinks and snacks you will make your way to a boat to sail the lagoon. You will watch the fireworks from the seven seas lagoon, a perfect spot to watch Happily Ever After. After you will have the opportunity to see the Electrical water pageant. A special moment and location to view. Cost is $75 per adult. A definite must do. I was going to suggest something similar. There are a lot of different firework viewing areas that include dinner/dessert or something similar.

Or I would just do crawl stopping and getting a drink and a snack at a bunch of different places along the monorail.
