Birthday Surprise?

My husband and I are going to Paris in three weeks to celebrate his birthday and we will spend that weekend (the day of his birthday and the day after) in the parks.
Last year we were in WDW and I was able to score a ressie for dining with an imagineer which was amazing. I want to do some sort of surprise for him this year but I'm not finding anything. Remy closes early and doesn't have a good vegetarian dish (I also need gluten free) so that won't do. We met tons of characters last year.. I really don't know what to do to make his day special!
I'm not finding any behind the scenes tours or anything even along those lines. :(

Any ideas?

There are three tours of the park, a Disneyland Parc tour, Studios your and a tower of terror tour (which is only in French).
Because of the time you're going most park restaurants won't be open for dinner. Have you tried the blue lagoon? I know the vegetable dish is vegan, so may be worth enquiring re: gluten free. The salad starter and sorbet dessert will be too!
 
Slightly off topic, but if you can get him to wear something that shows it's his birthday, like a big badge (that stands out more than the stickers from City Hall) then any character interaction should be really good. I got my best friend to do this on her 30th and our character interaction was amazing :)
 

There are quite a lot of surprises you could arrange for his birthday
As already mentioned there are tours in both parks
The best (as in most expensive ) restaurant is California Grill which is in the Disneyland hotel - this will be open for dinner but I wouldn't like to guarantee they will have anything gluten free on the menu but Im sure if you spoke to them beforehand you could try and arrange it. the menu changes quite often but you can look at it outside before you go in
There is also Inventions in the Disneyland hotel which is a character buffet with a lot of different options food wise
You could also have drinks in the DL Hotel or one of the other bars- Sequoia Lodge bar is exceptionally nice as well - perhaps wander around the lake trying the different bars and go up in the balloon
You could book an evening at Buffalo Bills wild west show but again check about the GF food option

Don't forget to stay in the park to when it closes and watch dreams - its one of the best night time shows that disney do
