Beyond the parks?

Disney offers several activities that can be done outside the four parks, such as DTD, the mini-golf courses, spas, petting zoo and carriage rides, cruises, etc. Besides the obvious City Walk, what does Universal offer in terms of things outside the parks? Any spas or dinner shows? Any hidden gems?

CityWalk, the hotels and Wet & Wild are the only things Universal actually owns outside of the parks. They still have room to expand if they wanted to put golf courses & the like on property.
 
While they are not officially Universal parks, we are getting a 14 Day-5 Park pass that will allow us to go to Sea World, WnW and Busch Gardens Tampa.

I have heard really great reviews of BGT from my family who live in Florida. My sister's family have annual passes. We have never gone because of the drive. I have read that it is just over an hour. This August we are giving it a try. An hour is not that long. In fact, Disney transportation from one resort to another can take almost an hour with the transfers and that never stops us from exploring other resorts when we stay at WDW.
 

There is a luau dinner show at RPR. And when we have stayed at HRH there have always been lots of organized activities around the pool.

Last time I was at RPR, they had a torch lighting ceremony w/fire twirlers. It was really neat. Also, they had horse & carriage rides at City Walk. I'm not sure if they have those things all the time, maybe someone here knows? :)
 
I've heard rumors of another set of parks south of Universal that have some sort of mouse, but I don't believe they exist.

I remember that rumor too, I think they named the mouse "Mortimer"

I heard you can buy a hat in the shape of his ears. Who would want to have mouse ears on their head all day long? Those hats will never sell, I tell you. It's worse than wearing a hat with two big droppy dog ears.
