Best Vegetarian dishes offered at WDW

I have to start this with saying I haven't been to WDW since I was a kid 20 years ago so I don't know much about any of the restaurants there. I will be going in January and heard it is a good idea to make reservations for sit down restaurants in advance so I was thinking about doing that within the next week or two. I am a vegetarian and am not a big fan of plain sorts of food like grilled cheese or cheese pizza.

What are some suggestions for restaurants that offer good tasting and creative vegetarian options? Also what are some of your favorite restaurants you would suggest checking out for a first timer? We will be going to both the quick service and sit down restaurants. Thanks so much!

I am interested to see the responses. I had no problems eating vegetarian when I went last December (Boma's breakfast buffet was my fave) but I'd like to know what else is out there for us.

Boma's breakfast buffet.. I will add that to my list. Breakfast is my favorite meal and I love buffets

Sanaa has lots of good veggie options that are always on the menu. It's Indian-inspired cuisine, so it makes for good veggie options.

I've had some really excellent veggie dishes at Jiko, Flying Fish, and Cali Grill. But those are signatures, so they don't have the exact dishes anymore since their menus change seasonally. But I'm sure any of the veggie dishes at the signatures will be wonderful.
