Hello! I am planning my family's first trip to Disney in November since 1991! My parents and sister will be with us as well.
I have reserved a tent site at Fort Wilderness for Wed Nov 14th but we will be staying offsite at a condo. We will do epcot that day with lunch and a swim/downtime at the site (we will bring a small tent). The next day we will do MK.
I would also like to do AK but I'm not sure if we should go on the Tuesday (that means 3 days in a row of Disney parks) or wait until Sunday (the weekend before Thanksgiving). We will be flying out on the Monday. My kids are 4, 7 and 10. Thanks!

I have not looked at any crowd calendars or park times but I would probably go with Tuesday over the Sunday before Thanksgiving. I think it will be more crowded closer to the holiday.

Weekends are generally busier than weekdays for most parks. I would pick Tuesday.
From what i read, locals (not sure how big that number really is) come to the parks Friday night through Sunday afternoon.

Touring Plans reports both those days as Crowd Level 2. Of course, that can change, but right now, things are looking really good for your trip.
