What do you think is the best Signature Dining choice at WDW? (I am taking Victoria & Albert's out of the running, since it is such a unique dining experience and it is a fixed price menu.) I'd love to hear your reasons too!
 
I can't really vote since I haven't tried any of those but I'm really interested in the results. They all sound so good and I'm thinking we will try one of them out on our fall trip.

I'm going to assume that you mean all restaurants and not just those on the dining plan.

1. bluezoo at the Dolphin. Reasons: very fresh food. Sophisiticated presentation and atmosphere. Not on the dining plan so the diners are paying OOP and the atmosphere is not all crazy noisy.

2. Bistro de Paris at Epcot. Reasons: Upscale French food, excellent wine menu, killer chocolate souffle. Again, not on the dining plan and no children's menu available so it generally has a quiet intimate feel to it. They do offer a price fixe menu but it's not the only option here.

If you are talking Disney signature on the dining plan, then I'd pick Flying Fish out of those. Reasons: The food is excellent; there is a good variety, they offer wine flights, it's on the Boardwalk. We eat at all of the signatures and our favorites change as chefs/menu change and Flying Fish is our current fav.
 

I've been to 5 out of your 8 and I voted Artist Point. Flying Fish a very close 2nd for me.
 
I've been to all but Citricos and voted for Jiko. Its my favorite restaurant period - not just at Disney - but everywhere and I make regular trips to Las Vegas eating at some really nice restaurants (Delmonicos by Emirl, Mesa Grill by Bobby Flay, the new Switch at the Wynn, SW steakhouse, Wing Lei, etc).
 
We have dined at all of these restaurants you have listed. I voted for Citrico's. Food quality and service. The next group I would consider would be Flying Fish, California Grill and Jiko.
 
1. California Grill - love the sushi, entrees, and view
2. Artist Point - peaceful atmosphere and good buffalo
3. Jiko - I loved the dishes with authentic African spices
4. Narcoosee's - view of Seven Seas Lagoon, and surf n' turf
 
Having eaten at almost every signature dining restaurant (on and off dining plan), Jiko is hands down offers the greatest depth of food quality and flavors.
 
Narcoossee's for the lobster and the view:lovestruc Oh the cheesecake is awesome too!!
 
Hi, Narcoossee in Grand Floridian sounds good but their filet mignon and loster tail sounds like a similar meal at Fultons which is only 1 table service, not two. Is Nar. better quality or just overpriced? Also the other places i'm considering is either Citricos or California Grill, which is better and why? Also, if you eat at the California Grill can you for sure go outside atop the Contemporary for the fireworks?-what is they start when you're in the middle of dinner, can you get up and go out? What time is best to go if say fireworks are at 9pm? Thanks!
 
We have eaten at all of these except Yachtsman's. To me, these can be tiered as follows:

Jiko
California Grill
Narcoossee's

These three are (outside of V&As) what I consider to be the premiere restaurants on WDW property. Best combinations of food, atmosphere, and experience. We have been to all of them in the past year and all of our experiences were outstanding.

Yachtsman's
Citrico's
Artist Point

These aren't "lesser" than the three above - just not in the same tier for our liking. I haven't been to Yachtsman's so this is a little heresy by me, but I have been to the other two. Our meal at Citrico's was great - I think it is the second most formal meal on property. AP didn't have the same in restaurant atmosphere for us.

Flying Fish
Brown Derby

Did Flying Fish last 4th of July after all the recommendations, and quite frankly I think Narcoossee's is just better in every way. This doesn't mean FF is bad, but after bluezoo and Narcoossee's, it is only the 3rd best seafood restaurant on property. Brown Derby is a park restaurant - just isn't as good as the others.
 
Jiko is our favorite, followed very closely by Flying Fish. I like YM but DH doesnt....going to try Cali Grill in June and maybe Citrico's in Oct
