For MK I like to lean on the garbage can on the corner right opposite Tony's Restaurant (That sounds terrible ) for EPCOT I'm not sure haven't been there in awhile
I can't stand too long so I have to stake my place out along main st. in MK at least an hour before the parade/fireworks. As far down the street towards the castle as possible.

Welcome to Dis to you too! That place is far back enough to see the fireworks beautifully, the characters passing by in parade are right there in front of you, my junk gets to sit on top of the can, and when it ends I beat feet to get out to the gates
I'll tell you where NOT to go for the illuminations- that staircase/bridge in front of France/ tutto italia. I usually do pretty good at researching but that was the one thing I didn't- we spotted those stairs and climbed up, patted ourselves on the back, they roped off the area in front of us (I think it was for the cruise people)....and when illuminations went off-- slightly to the left of us---behind THAT TREE and that island in the middle of the view....AUGH!!!!
In the MK we stand on the bridge going to Tomorrowland to watch fireworks (and Tink flyes right over our head ). For a parade we find a spot around the circle in front of the train station. I have an autistic son who does not like crowds or loud noises; we find those areas to be less crowded and he can retreat to a quieter location if he needs to. In Epcot we use our GAC to sit in the handicap area between Futureworld and World Showcase.
