Best park during late January?

Hey guys,
My mom and I are going to Disney in late January. We can only go to one park (or perhaps use park hopper option).
The Day we are going, both Animal Kingdom and DHS close early. Animal Kingdom, which was our initial choice, will be closed at 5:00. Both Epcot and Magic Kingdom close at 9:00.

My mom isn't to crazy about Epcot.

Which park would you recommend going to?
If you think park hopper option what parks and which one first??

If you're only going one day do the park you enjoy best. Crowds are pretty low late Jan (exc. MLK weekend) so you should be fine regardless especially if you plan the day well. But again, if I only had one day I would do what I wanted to do, not what was "best" that day.

I've decided I would like to do Animal Kingdom and maybe a park hopper to either MK or DHS. I can't choose. There's pros about both of them.
