Best non theme park activity

Outside of all the big parks what else would you recommend?

Here are some other things we are considering:

Gatorland
Day at Clearwater
wonderworks children's museum
pirates dinner adventure
Arabian nights

or anything else you think is a can't miss. We plan to spend 2 or 3 days doing non big park activities....ie Disney parks, universal, sea world etc.

We already are doing DD and TRex the day we get there.
 
we went on an airboat ride outside of port canaveral that was a blast! saw gaters, birds, cattle, horses and it was a lot of fun as well. i would do that again. never been to gaterland though sounds like fun. we also went to pass a grille beach in clearwater, and that was goregous! nice beach day, better than on the eastern side of the state. or check out forte de soto national park in clearwater, it was an easy drive.
 
We did the astronauts hall of fame and museum which is part of kennedy space center but cheaper and smaller. It is located several miles from ksc and has a lot of hands on activities and interesting displays. We spent a few hours here and then ate lunch by the ocean.
 
2 of my girls are huge reptile lovers. We did Gatorland and they did the *trainer for the day* Gatorland was great in letting all 5 of us go on the tour...although the 2 of them only did the activites. If you and your family likes reptiles I suggest Gatorland...we had a blast.
 

If you like outdoors-type things and want to see some of the "natural" Florida, I suggest tubing at Kelly Park/Rock Springs Run in Apopka.
 
Mini-golf at the Pirates courses is great fun. We love to go in the evening when the weather is just right even though they can get crowded.
 
We like a pool/resort day mid trip to rest :). The kids always love the pool time!
 
We enjoyed Arabian Nights. A local school band goes to Orlando every 2-3 yrs. They go there every time because the kids like it so much.
 
Me and my then 12 year old were in Florida this past July for 2 weeks- we can do no more than 5 days in the Disney parks before we have had enough so we found lots of things to do. We did do wonderworks, we drove down to St. Petersburg for the day and went to the beach, went Ziplining, went indoor sky diving (two days because she loved it so much!), went on an airboat ride, Universal Studios, and Discovery Cove

That airboat ride sounds so cool! Tell me more, if possible, like how expensive, how long, how far away, and most important, is there an internet site and do we need advance reservations?
