I love "they lived happily ever after" kind of stories, so my absolute favorite is The Princess Bride. It's a great movie, and the ending is so perfect.
Sleepless in Seattle is great, too.
There's a Mel Gibson movie that I forget the name of from the early 90's in which he wakes up in the 90's after being frozen for several decades...the movie isn't incredible but the ending is so sweet.
I really liked the ending for Pirates of the Caribbean.
A Beautiful Mind had a good ending, but that movie made me feel so stupid, lol. I was still confused when I walked out of the theatre.
