Best Mexican Restaurant close to Disney?

I know the Dis Unplugged podcast folks have a favorite Mexican restaurant, but I can't seem to find out which one it is...

We are looking for a great Mexican Restaurant outside the parks for dinner. We need to be close to the parks however, because we plan on watching the fireworks from somewhere on property.

We love Chuy's. It's a Tex Mex chain, but we don't have one by us, so it's fun to go there when we are on vacation. We will often go twice on a trip. We prefer the location on 192 (near AK) to the one on I-Drive. As I said, it's Tex-Mex and not "authentic" Mexican...but the chain is from Austin and they do Tex Mex really well.

We like Chevys Fresh Mex..great food. Outside DTD gates on Apopka Vineland, in the Crossroads plaza .
