Palio's at the Swan has great Italian. Make sure you go on a night that they have the strolling musician's...I THINK it's Tuesday thru Saturday, but I'm not positive.
Don't go to the Italian place in Epcot.
I'm not sure about Mexican. We had one great meal and one so-so at San Angel Inn (Epcot/Mexico.)

Can't help w/ Mexican--.
But for Italian I like Palio, Portobello Yyacht Club, and Cafe D'Antonio , in Celebration.

We really enjoyed the San Angel Inn Restaurant in Mexico, Epcot. And for Italian we also enjoyed Tony's Town Sqare Restaurant in the Magic Kingdom. Aslo there is very good seating outside to watch the parade at night. :)

Well,
We like Alredo's in Italy in Epcot. Our food has always been tastey and served hot. The service has been very good. I think we have been there 4 times and never had any issues or complaints. I've read alot of negative reviews and bad experiences here on the restaurant board but I only have good things to say about our experiences at Alfredo's and we plan on going back here in May. I think we are the only ones who like this restaurant!;)

We have always liked San Angel Inn in Epcot. Good food and a nice views. Our last visit was Chrismas Day 02 and we had a table that was right by the water. Could not have been better

Another vote for the San Angel Inn in Epcot. The food and atmosphere is incredible.

My vote for Italian would be Palio's. As far as Mexican -- don't get your hopes up there. If you insist on Mexican I would eat at the self service in Mexico. The restaurant inside isn't all that great, although it does has a nice atmosphere. They used to have excellent food at Juan and Only's, but alas they closed that restaurant.

Palios is MUCH better than Alfredo's in Epcot. Our last meal at San Angel was a terrible disappointment.

Another vote for Alfredo's. We love the food and the atmosphere. Its not a place to try for a quick lunch so relax and enjoy.
Palios was fine, but not what we are used to in the way of Italian.
For mexican (and this may seem odd) we love Pepper Markets mexican station. Freshly made food, served as you request.

Both Alfredo's and Pepper Market are on our scheudule for every trip.
Yummmm. Who's hungry?

We love San Angel Inn in Mexico for the atmosphere... For familiar Mexican food (the US version) I love El Pirata y El Perico in Adventureland.

If you want great Mexican food at a reasonable price I would step a little outside "the world" and visit Chevy's at the Crossroads just across from the hotel plaza entrance. Excellent food and huge drinks.

Our last trip down, I decided I needed a haircut. While I was waiting in the Main Street Barber Shop, the person on the chair ahead of me was talking to the barber. Turns out he was a CM- manager at Mama Melrose in MGM. Well, I eavesdropped. He was telling the barber that he thought Mama Melrose was one of the best kept secrets at WDW. Since I don't like secrets, I decided we should try it. The food was very good. Because of its "secret" status, it was not at all crowded. The menu was very diversified and the prices reasonable. I will definitely return. By the way, it is located just as you exit the Muppet Show.
