Best excursions for 7day western caribbean (3 ladies)

Hi we are going to be a party of 3 ladies in our mid-20's.
It's our first cruise ever, and we are having a hard time deciding what to do!
Except for a private mixology class and fish extenders, we are completely blank....
Recomendations for Grand Cayman, Cozumel, Falmouth and Castaway Cay please!
What excursions would be best for 3 adult friends for each port?

I'm not sure which ports you will see, but we did Falmouth, Jamaica over a New Year's cruise and I highly recommend Dunn's River Falls. My daughter (19 at the time) and I also rode horses in the ocean. Scared the crap out of me but she loved it!

Paradise Beach in Cozumel is great. I've been there 3 or 4 times now. Cab ride is about $20 each way. Admission is $3 per person and they ask that you spend $10 on food and/or drink. The beach is nice and there is a pool.

We have not been yet, leaving in 1 week...But we have decided on:
Cozumel: Mr. Sanchos - on our own
Grand Cayman: Dolphin swim and stingray adventure
Falmouth: Dunns River Falls

I enjoyed the adults only ruins and chocolate in Cozumel. In Jamaica the tranopy is expensive but very fun if you are adventurous.
