Disclaimer: I've only been to Citricos, Flying Fish, and Artist's Point. Citricos was the one I dined at most recently, but to me it felt the most upscale. The food was delectable, service outstanding. Dined with a large group and everyone was impressed.

Ate at Artist's Point with DH several years ago. Enjoyed it very, very much.

Flying Fish was somewhat of a letdown. Very, very loud, and some of the food didn't live up to potential.

Between Citricos and AP, I would choose based upon which menu appeals the most.

Would love to try Narcoosee's sometime! However, Jiko is on the top of my list of must-try's. Any reason it's not on your list?
 
From your poll, I rank them in the following order:

Flying Fish, Citricos, Yachtsman, Artist Point, Narcoosees

We dine at the signatures regularly. Flying Fish is noisier as it has an open kitchen but the overall menu is more appealing to us and we enjoy the wine flights offered. Citricos is the most upscale from the list with a more sophisticated (but limited) menu and your best bet for a quiet adult meal. Yachtsman's: I've been disappointed in my cuts of meat outside of the filet (I've tried the New York twice and the ribeye once but now stick to the filet here) but I love the bread, sides and desset. AP has an interesting menu but not really my favorite and I do not care for the rustic decor. It's also got a better shot at a quiet meal though. Narcoosees is my least favorite. This is one of the signatures I feel has been damaged by the dining plan. The unique items are gone from the menu and the popularity of dining here to watch fireworks has taken away the quiet meals we used to enjoy.
 
Citricos 1st. Will always be for me :thumbsup2

We've only had the opportunity to try YS and Narcoosees, so please take that into account!

We LOVED, LOVED, LOVED YS! Narcoosees was excellent as well, especially with Wishes right in front of us, but the food at YS was beyond anything else i've had. The NY strip steak, Buffallo cheese and Tomato appetizer, and Creme Brulee, well...let's just say I still dream about it and my sister brings the meal up regularly. We cannot wait to get back there and it will be a must for every trip! Oh, and their wine selection is awesome as well though I can say the same for Narcoosees!
 
I've only been to Citricos, Flying Fish, and Narcoossee's.

Of those, I highly recommend Citricos and Flying Fish. They are both really excellent restaurants with fantastic food and service.

Narcoossee's shouldn't be a signature, IMO. It was just ok - and for those kind of prices, the food should be more than just ok.
 
The ones you have posted for your poll, I voted for AP because that is the only one we have been to and really liked. However we are trying out Yachtsman's Steakhouse in a few weeks and can't wait, read really good reviews on it and I can't wait to try it out for ourselves.
 
We've eaten at all of these and enjoyed our meals at each of them. But, I love Narcoossee's the best. We ate there for the first time on our Disneymoon and we knew right away that we'd be going back. We love to go there for special occasisons.
 
Citrico's and Flying Fish are my top two. Food and service has always been excellent and I've dined at both many times.

Yachtsman was very nice but didn't seem all that special to me. I only dined there once.

I've been to Artist Point and Narcoossee's twice. The first time at AP was mediocre; the second time we had an excellent server who really made the experience worth the 2 TS credits. For Narcoossee's the only thing that makes this worth going out of the way for is the Almond Crusted Cheesecake.
 
Citricos - I feel like it's the most consistently good overall. I like the Mediterranean flavors, and it has some great meat dishes (veal shank, short rib, etc).

Artist Point is hit or miss, sometimes it's amazing and other times we regret going there. Narcoossee's is the best value on the Dining Plan because of the lobster/surf and turf dishes, but it can be inconsistent. Flying Fish and Yachtsman usually disappoint me.
 
My rankings:

1 Yachtsman: Great steak, nice atmosphere, great service
2 Narcoosees
3 Citricos
4 Flying Fish and Artist Point: Tied for last place. Flying Fish was overpriced for what it was. Not worth 2 credits. Had a terrible experience at Artist Point on all fronts (service, atmosphere, and food). I'll eat a counter service hamburger before I return.

I think it's great that there's something for everyone though. Right now the percentages on your poll are ranging from 13%-25%... I love it that someone likes each restaurant. There's something for everyone at Disney.
