I have found each character meal to be unique from the others, so it depends on what you are looking for.
We love Goofy's Kitchen, large buffet selection, games & characters we've seen are: Goofy, Pluto, Minnie Mouse, Alice, Mad Hatter, Chip, Dale, Jasmine, Aladdin & Baloo
We did Lilo-n-Stitch for the first time last week. Smaller buffet, games & characters we've seen are: Lilo, Stitch, & then saw Minnie Mouse & Daisy Duck at the photo area. Only the 2 characters roaming around the tables, but they came & visited multilple times, & my kids (even my 19 & 22yr old) were had a blast with Stitch!!
We've done the Minnie & Friends, decent buffet (some food was cold), great character interaction of classic friends. We've seen: Minnie Mouse, Chip, Dale, Fairy Godmother, Hook, Pooh, Eeyore & Tigger.
We've done the Ariel's Princess Breakfast which is served family style. We've also done the lunch where you order off the menu. You see Ariel prior to seating, then 4 of the princesses are introduced one at a time & they come by your table. You only see them the one time. We've seen: Ariel, Snow White, Cinderella, Jasmine, Belle & Aurora
We have not done the Storytellers Brkfst, but have read its a small buffet or ordering off the menu & the characters tend to be the "animal" variety: Baloo, Chip, Dale, Rafiki, Koda & Kenai & such.
