BEST BBQ Side Dish- what's yours?

Well... I live in NC. Barbecue is a totally different thing than a cookout where you slap some meat on the grill. Barbecue is pork, slow cooked in a smoker over a wood fire and served pulled (or ribs). Sauce is optional- either vinegar based or tomato based. Some like mustard based as well.

My favorite sides for barbecue are slaw, baked beans, and hush puppies. Thngs that I like to serve at a cookout are things like roasted corn on the cob, pasta salad, grilled fruit, and chips.


Mmmmm, I love me some of that North Carolina barbeque. Down on the Outer Banks you get the vinegar-based sauce. It is to die for!

I think I see a road trip in my future :rolleyes1

I live in Virginia and I totally agree. We prefer a vinegar based barbque in my house.

Slaw is a must.

White bread. That is the only side offered at the greatest BBQ rib joint on earth, Dreamland Ribs in Tuscaloosa, AL.

Is this the place that looks like a dive and serves the meal on cheap paper plates? My sister went to school in Alabama and she and my mom always stopped off at this BBQ place on the drive down and back. They both swore it was the best BBQ there ever was.

That sounds like it...though, that sounds like a lot of barbeque joints in the south. If it is in Tuscaloosa, I'm sure its the place. In the minds of those in Tuscaloosa, there is no other rib shack in the world.
 
Bean salad

15oz can wax beans
15oz can red kidney beans
15oz can chick peas
1 box frozen green beans—cooked
1 red onion
1 large green pepper


Dressing
1/2cup sugar
2/3 cup red wine vinegar
½ cup olive oil
1 tsp salt
1 tsp pepper
½ tsp Worcestershire sauce

Drain & rinse beans and peas and mix together in large bowl with onion and peppers
Mix all dressing ingredients together and pour over bean mixture.
Let marinate in fridge for at least 24 hrs stirring a few times
Serve with slotted spoon.
 
Low-cal Strawberry Pie

1 3-oz pkg of sugar-free strawberry Jello
1 3-oz pkg unflavored gelatin
3 cups water
1 3-oz pkg sugar-free vanilla pudding, the cook & serve type
3 cups strawberries, sliced

Dissolve gelatin and Jello in 2 cups boiling water. Stir in 1 cup cold water and pudding. Heat the mixture to a rapid boil on the stove or in the microwave. Chill mixture while you cut up the strawberries. Spread strawberries in the bottom of a deep pie plate(no crust) or 2 quart casserole. Pour the cooled Jello/pudding mixture over the strawberries and Chill. Top with Fat-free Cool Whip.

This pie is so delicious! I didn't tell my family it was all sugar-free/fat-free and they thought it was DA BOMB:banana:


Every month, I make a treat for DS's music teacher. This year, it has been sugar-free or low cal/low fat things, as she's on a diet. I was just thinking I needed to look for June's treat - and now I found it! I can't wait to make this for her! Thanks for posting it. :)
 
Loaded Baked Potato Salad

Ingredients

8 potatoes, cubed (half peeled or half with skin)
2 teaspoons salt
6 slices bacon, diced & crisp cooked
6 green onions
2 cups cheddar cheese, shredded
16 ounces sour cream
1/4 teaspoon pepper
1 cup mayo

Directions

Cube and boil potatoes with salt. Drain. Crumble bacon and slice onions(including tops). Combine sour cream, pepper and mayo. Add to potatoes. Add bacon, onions and cheese (reserve some of each for top). Mix with potatoes. Pour into baking dish. Top with reserved cheese, onions, and bacon. Bake 350 for 10-15 minutes (until cheese melts).

Can be served warm or cold.

I made this last night for a family birthday BBQ and it was a huge hit! It was delicious....thank you for sharing!

Here's one that I tell people about and they think I'm nuts but then taste it and love it every time.

Fresh Strawberry Pie

fave pie shell cooked/cooled (either home made or I use the premade graham kind, except the shortbread version instead of graham)
2 pts fresh ripe strawberries
1 can sweetend condensed milk (NOT evaporated milk)
1 lemon

wash and slice the strawberries. Toss with the can of milk and juice of lemon which has been whisked togteher. Heap into shell. Chill. OMG it's TD4!

Minkydog, I'm planning on making this tomorrow but have a couple of questions about the size of the gelatin packages...

The SF jello is either 0.3 oz (4 servings) or 0.6 oz (8 servings) - so I'm wondering which one it right?

Also, the plain gelatin I found (Knox) is in a 1 oz box that has 3 envelopes in it...so I'm wondering how much of that to use.

I'm hoping you'll see this and be able to answer for me. Thanks!
