BEO help - figuring out minimums

Hi everyone - my planner is out for a few days and her assistant hasn't povided me with any helpful information.

I am trying to figure out totals for my minimums - both the $10k day min and the $100/pp food totals.

Does everything (not including tax/service) get added up towards the $10k min (as long as all events happen on wedding day)? Do Epcot viewing fees (dessert party)?)

How do they figure out the food cost pp? I am having a sparkling cider toast, mad hatter cake + sheet cake and a lunch bufet and dessert party. There are also kids there (I know they dont count for the $100/pp). We are not having a bar and just staying with iced tea, lemonade, water and coffee provided with the buffet - I have done calculations a few different ways to figure out what my per person is and just don't know how Disney calculates it - trying to make sure those are set and will cut away other things in the budget to be at $10k. Do I total ALL food/beverage regardless if kid or adult and divide by # adults? Do I leave kids seperate and total everything else up and divide by # adults? Do I take cider or cake and divide/# people and add that per person to the adult buffet cost?

I don't know if this helps, and some please correct me if I am wrong, but this is what we are doing and I believe it is how it works (in general).

Buffet - Modified Tinker Bell - $65/person for 28 people = $1820
1 children's Dinner = $24.50
Cake = $475
8 Bottles of Champange @ $37 = $296
1 sparkling cider = $24
Dessert Party Buffet - $25/person for 28 people = $700

Food & Beverage Total: $3339.50
Minimum Required: 28 * $75 = $2100

So, I have met the minimum per person requirement. All children and adult meals/desserts go towards the minimum. Your cake goes towards the minimum as well as any beverages.
 
Tax and gratuity does not count towards your overall minimum or your F&B minimums. They will be on top of your minimum amount. Any food and beverage the day of your wedding (including the per person cost of cake) will count towards your per person food and beverage minimum. You don't have to meet a per person minimum for people under 21, but their amounts can count towards any venue specific food and beverage minimum that you have (if your venue has one). Basically, delete the costs for people under 21 from the equation (including the money being spent on them) and you'll get your new total. Divide that by the number of people 21 and up to get your per person amount. Or, just figure out the per person breakdown for everything and add up the individual elements.
