BTW, I meant to ask-What's the procedure for the can up the butt chicken? I've always heard of this, but my luck I'd have an explosion in the oven and the family would never let me live it down.
 
I think you're supposed to grill Beer Butt Chicken. Can it be put in an oven?

Got to borrow the parents' grill and try it sometime.

Now I'm just waiting for Hell's Kitchen to come on. I should be looking for some little stuff I haven't packed yet. Like my teeth flossers. My dentist doesn't want me going on trips without my teeth flossers.
 
Yep ... beer can chicken belongs on the grill. That's one of Jay's favorite things to prepare - quick and easy. :thumbsup2

I am still at my brother's in laws after a nice Rosh Hashana dinner. It's like Thanksgiving dinner, but brisket instead of turkey.

I had some Estancia Pinot Grigio, which was good. I would have liked the pear flavored Viognier with some brie, though.

And I updated my blog earlier today.

Took FOUR HOURS! I got the first four right at 3:30 (Kristin woke me up thinking I had neglected to set my alarm, but I had intended to get up at 4:30). The next three were impossible. I kept getting "the system is overloaded" and "Invalid Last Name" errors, but I could book other things. It was very odd.

So, at 7:00 I called WDW and got a great CM who booked the last 3 for me. Tea at the Grand, Narcoossee's on Christmas Eve and bluezoo on Christmas night. Other than that we have Yak & Yeti, Raglan Road, Boma and Fresh for breakfasts and Coral Reef. :thumbsup2

We had to get drinks to be on here with all the wine and cocktail talk! and yes, it is only 2:45 California time! Darn I am late today! :lmao:

Sorry I've been awol. Team mom for the tennis team is taking up a lot of time! I'm at every match (at least 2 a week) and we don't get home till 7pm at the earliest--usually closer to 8. Add to that, kids and inlaws and life here has been a little nutty :upsidedow

Good Monday Friendies!!

I am looking for a good recipe for Gingerbread!! I have a wonderful one for the cookies but need the pan one.

I tried one out yesterday but it flopped. :upsidedow It sank in the middle during cooking. Tasted ok, maybe too much clove though.

So, if anyone has a killer recipe they wouldn't mind sharing, I would be thrilled.

I love making beer butt chicken. We do ours on the smoker instead of the grill. It takes a bit longer but is very delicious.


Started packing tonight. One more day of work then I'm off til Oct 5. :woohoo:

oh and thanks for the bread say it soft and it's almost like praying... now I have that song from West Side story stuck in my mind. And yes I know that tells you how old I am. ;)

I have done "Beer Can Chicken" in the oven with no problems. Here's the recipe I started with.


PREHEAT oven to 400 degrees F. - rack on bottom.

REMOVE any innards or other items from inside of the chicken.

RINSE the chicken inside and out in cold, running water.

OPTIONAL: seal neck of chicken with skewer (shown) for gravy, seal neck, for moister chicken, leave open.

RUB the chicken, inside and out with Memphis rub or your choice of spices.

OPEN a standard can (14 oz) of your favorite beer, punch a few extra holes, and quaff off about 1/4 of the beer.

ADD 2 TBSP rub or spice to beer can.

PLACE beer can on ovenproof pan or dish (this allows the chicken to cook indirectly and catches the juices if you want to make gravy.

ARRANGE chicken on beer can, allow the two legs to form two sides of tripod so chicken is stable (picture).

WHEN oven is ready (400 degrees), place chicken on pan or plate on bottom rack. Some cooks 'tent' the bird with foil for the first hour or so to prevent over-browning.

REDUCE oven to 350 degrees after 1/2 hour.

BEST when chicken cooks 1 1/2 - 2 hours - check visually after about 1/2 hour and rotate the chicken in a half circle to cook evenly, should brown slowly and evenly.

WHEN chicken is ready, using tongs and oven glove if necessary to separate chicken and beer can, carefully remove to separate platter. Allow to stand for 10 minutes.

My changes: Season the chicken very well inside & out with your favorite poultry seasonings. I like Paul Prudomme's plus additional dried herbs. I have used beer but like the flavor with white wine better. So I empty a soda can & fill it halfway with wine. I then add fresh rosemary & sage to the can & about a tablespoon of your seasoning & herbs. Tuck the ends of the chicken wings back to prevent them from burning. Place chicken in large sturdy pan to catch overflowing juices.

I have tried making a gravy with the liquid in the can, both with the beer & the wine. It's awful! Very bitter.

I haven't had an explosion yet!:goodvibes I use a roasting pan with sides & don't fill the can.

I guess I've been lucky, I tend to really challenge that Kitchen God. I still use an old fashioned pressure cooker! :laughing:
